Gellan gum is a pseudomonas elodea fermented water-soluble polysaccharide, it is widely used in all kinds of foods, beverages , industries and consumer goods as gelatinizer or suspending agent.
      Gellan gum is a kind of anionic linear polysaccharide, consists of a chain of repeat tetrasaccharide unit. They are formed by glucose, rhamnose and glucuronate. High acyl gellan gum in the same glucose unit has two kinds of acyl groups (Acetyl and Glyceryl) . Each unit has a glyceryl, each two repeat units have a acetyl ; If low acyl gellan gum acyl group is removed, two gums’ features will be different. This multifunctional gel can be used alone, it also can be used with other materials concurrently, and then form a variety of texture; Gellan gum can form a gel in a very low dosage. It also can improve the products’ flavor release. RBBIO gellan gum contains high acyl and low acyl two type. Low acyl gellan gum is fermented from high acyl gellan gum. Low acyl gellan gum can form hard and brittle gel. High acyl gellan gum can form soft and elastic gel. Change the gellan gum ratio can form different texture.
